Some people think you have to spend a fortune to eat an organic diet. That is not true. You can eat healthier and actually spend less. Plus you'll spend less on doctor visits and medicine too. Today's grocery list was $133. Granted I did not buy meat this time (I had plenty left over from last weeks trip) I do practice "meatless Monday" which one completely meat free dinner each week. We sometimes do more than one meatless dinner each week; but at least strive for one. For our meatless Monday this week, we have organic whole grain pasta and organic spaghetti sauce. You can make your own sauce (recipe to follow) or you can use a store bought jar. There are several different options. I bought store bought whole grain organic noodles; but you can also use spaghetti squash. Serve with a side salad (organic of course) with a balsamic vinaigrette.
I bought lots of fruit for snacking; bananas, grapes, strawberries, pineapple, apples, oranges and a coconut.
For breakfast time, I bought organic whole grain waffles. Mornings are hectic at my house, so I bought frozen ones. I top them with organic peanut butter for my son and organic local honey for my daughter. Pair with sliced bananas and almond milk for a healthy delicious breakfast before school.
